Although thanks to a huge conservation effort, bitterns in the UK are now on the up it is hard to believe that in the Middle Ages they used to be so common they were eaten for Sunday lunch!! Now thriving in the wetland of the Avalon Marshes they can be frequently heard and seen through out the year.
